The main task of the ventilation system of catering and entertainment establishments is to ensure effective removal of food odors, tobacco smoke, other unpleasant odors and excess heat from cooking in the kitchen, as well as the supply of fresh and clean air from the outside.

The ventilation system of the restaurant is conventionally divided into kitchen ventilation (the room in which something is prepared (hot and cold shop)) and ventilation of other rooms (hall for visitors, dance floor and office space). For each room, specific ventilation equipment is selected that meets certain technical requirements or special needs.

Hall ventilation

The air need for the restaurant hall is calculated according to the number of seats.

It is recommended to install supply and exhaust ventilation with heat recovery in the hall of a restaurant or cafe. These are ventilation systems in which there is both fresh air and exhaust. In addition, thanks to the copper heat exchanger contained in the system, the exhaust air transmits the air temperature from the street. Thus, the «street» air enters the hall not only fresh but also heated in winter or cooled in summer. This principle of ventilation is called heat recovery, and ventilation systems – recuperators. The best modern decentralized ventilation systems are Prana recuperators with copper heat exchanger.

In addition, in Prana recuperators the inflow is always 8-10% higher than the hood, which compensates for the hood in the bathrooms and kitchen, or the inflow is regulated if necessary.

Additionally, it is recommended to install air conditioners. Recuperators can be paired with air conditioners, making them easier to work with. Prana recuperator will maintain this temperature the air temperature that the air conditioner will «make» (even when hot air is supplied from the street in summer). After all, the recovery rate of domestic ventilation systems is 92%.

Kitchen ventilation

For kitchen ventilation it is also advisable to use supply and exhaust ventilation with duct supply and exhaust system. Usually, air conditioners are not installed in rooms that are designed for cooking.

In the hot shop special attention should be paid to the places of formation and active accumulation of various odors: stoves, roasters, braziers, etc. In such places use special devices – exhaust umbrellas with grease traps, so-called process hoods. It is best if they are made of stainless steel and can be washed regularly. Grease traps protect fans from dirt and grease.

The capacity and performance of the ventilation system in the kitchen of a restaurant, cafe or bar is calculated depending on the equipment used in the kitchen. Thus, the umbrella of the process hood should be 10 cm larger than the hob.

As an example: if the size of the plate is 600×600 mm, then install an umbrella size of 800×800 mm. Then the exhaust fan motor must provide air exchange of at least 800-900 m3 per hour.

When designing the ventilation of the restaurant kitchen, you should also keep in mind, that fresh air should be supplied to 8-10% less. This way, odors from the kitchen will not enter the hall. The air balance in the kitchen or in the hot shop is restored by providing supply ventilation, which is installed in the kitchen on the opposite side of the hood.

For industrial models, a coarse air filter is additionally installed on the air supply in front of the recuperator, which prolongs the operation of the system.
